Ingredients
2 cups milk (Cow, Goat, Almond, Oat, or Coconut)
1/4 cup organic olive oil (You can also use butter or Coconut oil)
1/2 tsp organic vanilla extract
2 tbsp organic apple cider vinegar
3 tbsp organic coconut sugar
1 tbsp baking powder
1/2 tsp sea salt
3/4 cup + 2tbsp (115g) organic white rice flour
1/2 cup (53g) organic brown rice flour
1/2 cup (53g) organic sorghum flour
1/4 cup + 1tbsp (48g) organic potato starch
3 tbsp (20g) organic tapioca starch/flour
1/2 tsp (2g) organic xantham gum
Directions
- Whisk together vinegar and milk let sit 5 minutes.
- In a separate bowl mix together flours, xantham gum, baking powder, and salt.
- Add in oil, vanilla, and sugar, to the milk and vinegar.
- Pour dry ingredients into the wet ones, mix well.
- That batter will look very thin. Let it sit for 10-20 minutes…the batter should look a lot thicker and feel like pancake batter.
- While the batter is sitting preheat your waffle iron. Like this one.
- Follow your waffle irons instructions to make the waffles.
- Top with your favorite toppings and enjoy!
Notes
- If you own a kitchen scale you should weigh the flours, for a more accurate result.
- Store left over waffles in an airtight container for up-to 3 days. When ready to eat reheat in toaster oven.
- You can also use 2 cups and 2tbsp of gluten-free 1-1 flour, but you will get better results with creating your own “blend”.
