These crispy Gluten-Free Zucchini Fritters with a creamy Yogurt Dill Dip on top have become a summertime favorite in our house. Light, golden, and packed with fresh zucchini, they’re the perfect way to turn abundant garden veggies into something truly delicious and nourishing. Adding potato helps to make them crispy and improves the texture, while keeping the signature zucchini taste.

Whether you’re looking for a healthy appetizer, a quick lunch, or a fun vegetable-packed side dish that even the kids will enjoy, these fritters check every box. They’re naturally gluten-free, easy to make with simple real-food ingredients, and come together in minutes. Paired with the bright, tangy yogurt dill dip, they feel like a little taste of sunshine on your plate.

Gluten-Free Zucchini Fritters with Yogurt Dill Dip

Ingredients

  • Fritters
  • 1 cup shredded zucchini or any other summer squash, squeezed dry. (About 1 medium zucchini.)

  • 1/2 cup + 2 tbsp shredded russet potato, squeezed dry.

  • 2 tbsp shredded onion, packed tight.

  • 1 egg

  • 1/4 tsp garlic powder

  • 1/8 tsp ground pepper

  • 1/4 tsp salt

  • 4 tbsp gluten-free all-purpose flour. (You can also use 2 tbsp oat flour, and 2 tbsp tapioca starch.)

  • 3 tbsp shredded cheddar, mozzarella, or Parmesan cheese.

  • Optional: 2 tsp dill

  • Olive oil or butter for frying

  • Yogurt Dill Dip
  • 1/4 cup of Greek yogurt

  • 1 clove garlic

  • 2 tsp finely chopped dill

  • Salt and pepper to taste

Directions

  • Fritters
  • Shred your zucchini, potato, and onion, using a food processor.
  • Let shredded vegetables sit with a sprinkle of salt for 5 minutes.
  • Then squeeze dry. I like to use my hands and then a paper towel. You can also use a clean cheese cloth.
  • Beat your egg with all of the spices in a small bowl.
  • In a large bowl, mix shredded zucchini, potato, onion, and cheese. Add in flour and beaten egg. Mix well.Zucchini Fritter Batter
  • Heat your frying pan on medium-high heat. Add olive oil or butter. Make little balls out of the batter with your hands, or just scoop a heaping spoonful straight onto the pan. Flatten the fritters out.
  • Cook until both sides are brown and crispy.Zucchini Fritters Frying
  • Enjoy them straight of the frying pan, or with a dollop of the Yogurt Dill Dip.
  • Yogurt Dill Dip
  • Mix yogurt, dill, salt, and pepper in a small bowl.
  • Squeeze in garlic using a garlic press. Mix well.
  • Plop a spoonful onto fritter and enjoy!

Notes

  • Best Enjoyed Warm
  • Store in an airtight container, and reheat in the oven or on friyng pan.
